A Quick Camp Recipes to Try

A lot of people heading camping tend to go for ready cooked or dehydrated meals, that do have their place and tick a number of boxes, being quick, lightweight, and economical… but for those of us who are food snobs like myself it has to be something a bit more adventurous…

Basque style Seafood Cassolet

300g mixed seafood (most supermarkets to a fish pie mix)

½ a stick of chorizo cut in to small dice

1 red pepper cut chunky

1 yellow pepper cut chunky

Juice and Zest of 1 lemon

1 Small Tin of butter beans

A few sprigs of thyme

50g of unsalted butter

Tin foil and greaseproof

½ spoon of ground cumin

This dish is ideal to do on the Barbie it’s really quick to prepare and takes very little cooking time and is a bit different from the usual burnt sausage and chicken drummers.  Combine fish, chorizo, chopped peppers, and drained butter beans together in bowl. Then we need to make our cooking bag using the foil and greaseproof. Lay the tin foil out with the dull side facing upwards place the greaseproof in the middle a couple of cm from the edges and crimp the foil over at the edges. Then place the Seafood mix in the middle not too heaped. Sprinkle on the fresh thyme, cumin, lemon zest, add lemon juice and diced butter. Fold in half crimping the edges together firmly and place on hot bbq for 7 t0 8mins or until the parcel has puffed up. Serve in foil bag saving on washing up and giving you an amazing aroma when opened.
